You burn one side and then turn it over and burn the other.

Double-LAYERED is a new technology. It will allow you to burn twice the amount of data/video on one side the disc as one DVD-R or DVD+R. I cannot find any double-layered discs less the 12.00 each right now. You will also need a new burner for the double-layered discs.
